Sun-Dried Tomato Dressing

Ingredients
2 small shallots
Method
1) Finely chop shallots and garlic in food processor
1 or 2 cloves garlic
12 sun-dried tomato halves in oil, drained and chopped (double if you want a paste)
6 black pitted olives
2 Tbsp. balsamic vinegar
4 Tbsp. fresh Thyme or Basil
1/2 cup olive oil
2) Add sun-dried tomatoes, olives, balsamic vinegar, fresh thyme or basil, salt and pepper to taste
3) Slowly poor in olive oil and mix until smooth
4) Use as a paste spread with crackers or combine with noodles
5) (about 3/4 of a cup)
6) Serve to greedy children.
