Stuffed Peppers

Ingredients
4 Peppers (medium size)
Method
1) Preheat Broiler
1 Cup hot cooked rice (follow packaged directions)
1/2 Cup chicken stock
1/2 Tsp. Curry Powder
1/2 Cup grated cheese (I prefer parmigana, but you can use any kind you want)
Bread Crumbs
Butter
Salt and Pepper
2) Bring a large pot of water to a boil and have a bowl of ice water on hand
3) Cut the tops of off the peppers and take the seeds out. Put them in the boiling water for about 3-5 minutes, or until soft.
4) Carefully take the peppers out and put them in the ice bath (this is known as blanching).
5) In a bowl combine hot rice, salt and pepper to taste, curry powder, and cheese. Stir together.
6) Fill the pepper cases with the rice mixture. Sprinkle a layer of bread crumbs on the tops of the peppers. Drizzle butter over the bread crumbs.
7) Brown breifly under the broiler.
8) Serve to greedy children (Serves 4)
