Southwest Crab Cakes w/ Lime and Chiles


Ingredients


1 Egg, beaten
1 Tbsp. Mayonnaise
2 Tsp. Dijon Mustard
1/8 Tsp. Cayenne spice
1/2 Tsp. Worchestershire Sauce
1/2 Tsp. White pepper
1/8 Tsp. Salt
1 Lbs. fresh crab meat
1/4 Cup chopped fresh parsley
1/4 Cup chopped green onions
8-10 Saltine Crackers
1-2 (2 inch) serano chiles, seeded and minced (if you cant find - just use a jalepeno)
2 Tbsp. unsalted butter
2 Tbsp. Vegetable oil
12 Lime Wedges

Method

1) Combine the egg, mayonnaise, Dijon mustard, cayenne, Worchestershire sauce, white pepper and salt in a bowl. Mix well.
2) Stir in the crab meat, parsley, green onions, crackers and chiles. Shape into 12 patties. Place on foil-lined tray.
3) Chill, covered, for at least 30 minutes. This is very important or they tend to crumble easier when cooking.
4) Saute the crab cakes on both sides in the butter and olive oil in a skillet over medium-high heat until brown and crisp.
5) Serve with lime wedges.
6) Serves 6.
