Jan's Salt Crusted Prime Rib

Ingredients
Any size Prime Rib
Method
1) Preheat oven to highest temperature. Take meat out 1/2 hr before cooking to allow it to come to room teperature.
2 Boxes Kosher Salt (or Ice Cream Salt)
Water
Tin Foil
4 Pie Tins
Large Aluminum Tin
2) Place Aluminum tin on table. Place two large pieces of tinfoil going in opposite directions in the large tin. (These pieces of foil will be used to wrap the roast, pie tins and salt together and form a seal)
3) Pour some salt in the bottom of the pan -- approx 1 inch thick...sprinkle some water over the salt.
4) Put the roast in the large tin pan.
5) For this next step you will need two people: Place Pie tins on each side of the roast. Pour in salt all the way around the roast, and on top. Drizzle water as you go - just a little bit of water will do.
6) Bring the foil around and seal the roast, salt and pie tins together.
7) For Medium rare, cook 15 minutes per lbs. You probably should use a meat thermometer also - put in before placing in the oven so the salt crust is not disturbed later.
8) Serve to greedy children.
