Salmon w/ Soy-Honey and Wasabi Sauces


Ingredients

4 (6-oz) peices salmon filet - you can just use a whole filet
1/2 Cup Mirin (Japanese sweet rice wine - found at some local supermarkets or asian supermarket)
4 Tbsp. Soy Sauce
1/4 Cup Rice Vinegar
1 Tbsp. Finely grated peeled fresh ginger
1/4 Cup Honey
1 Tbsp. Fresh Lime Juice
2 Tsp. Wasabi powder
1 Tbsp. Water

Method

Preheat Broiler

Marinate Salmon
1) Stir together mirin, 2 Tbsp. soy sauce, vinegar and ginger in a shallow dish
2) Add fish, skin sides up, and marinate, covered, at room temperature for at least 10 minutes.

To Make The Sauces
1) Boil 2 Tbsp. soy sauce, honey, and lime juice in a small saucepan, stirring frequently, until thickened, about 4 minutes
2) Stir together wasabi powder and water in a small bowl. Let sit, covered, for 10 minutes - allows the heat to build.

To Cook The Salmon
1) Broil fish, skin side down, on oiled rack of a broiler pan 5 to 7 inces from heat until fish is just cooked through - about 6-8 minutes.
2) Serve salmon drizzled with sauces. Serves 4. Great with sushi rice and "korean carrots and daikon".
