Smoked Pork Butt for pulled Pork Sandwiches

Ingredients
Method
5-7 lbs Pork Butt (Pork shoulder)
Chile powder
salt
pepper
Double Recipe of BBQ Sauce
Grill w/ lid
Charcoal
hickory wood pieces (you can use other types if you prefer)
1) Soak the wood pieces in water for about an hour before using
2) Light charcoal, wait until gray. Move all of the charcoal to one half of the grill, place a drip pan on the other side.
3) Place the some of the wood pieces on top of the charcoal. Place the pork butt on the side with no direct heat.
4) Cover the grill. Maintain the grill by adding charcoal and wood when appropriate. Make sure that air can reach the coals from the vents on top and bottom.
5) The meat is being smoked, so you do not want high heat - but make sure to keep the charcoal burning.
6) This should cook in about 4-5 hours - take it off when the internal temperature reaches 160 degrees.
7) 3-4 hours into the smoke, begin to prepare the BBQ sauce
8) Remove the meat from the grill and let sit for 10 minutes.
9) Begin to pull the pork by using a knife and fork; pulling it apart into small pieces. When finished, combine with BBQ sauce in a large bowl
10) Serves 8-10. Coleslaw or Potato Salad is a great side dish for this recipe.
11) Serve to greedy children.
