Roasted Herb Potato Wedges


Ingredients


2 Tbsp. Dijion Mustard
1 Tsp. Olive Oil
1 Tbsp. Fresh Chopped Rosemary
1 Tbsp. Fresh Chopped Oregano
1 Tbsp. Fresh Copped Parsley (Flat-Leaf)
1/2 Tsp. Salt
1/4 Tsp. Black Pepper
1 lbs. uncooked new potatoes, white or red, cleaned, quartered

Method

1) Preheat the oven to 425 degrees
2) Combine all ingredients, except potatoes, in a small bowl
3) Place poatoes in a large zip-lock plastic bag. Add mustard mixture.
4) Close bag and shake to coat
5) Pour contents of bag into a shallow baking pan coated with cooking spray
6) Bake, turning occasionally, until potatoes are tender - about 25-30 minutes.
7) Serves 4 (2 points per serving)
8) Serve to Greedy Children.
