Turkey Pesto Roll


Ingredients

1 package ground turkey
1 cup fresh bread crumbs
1 beaten egg
2 cups fresh basil leaves
1/4 cup grated parmesan cheese
1/4 cup fresh parsley leaves
2 to 3 cloves garlic, peeled
1/4 teaspoon salt ; 1/4 teaspoon pepper
1/4 cup olive oil

Method

1) preheat oven to 375
2) In a mixing bowl combine turkey, bread crumbs, and egg
3) Arrange mix on a large sheet of wax paper or aluminum foil and form into an 8 x 12 inch rectangle
4) Place remaining ingredients in food processor and pulse on and off until well combined
5) Spread pesto sauce over meat, reserving 1 Tbsp. of mixture
6) Roll meat into a roll using wax paper as a guide
7) Pinch ends of roll together to enclose filling, discard wax paper
8) Spread remaining pesto mixture over top of roll
9) Place on baking sheet, seam side down and bake for 30-40 min.
10) (serve with tomato sauce if you prefer)
11) (serves 4-6)
12) Serve to greedy children.
