David Eyre's Pancakes
Ingredients
1/2 cup flour
Method
1) Preheat oven to 425
1/2 cup milk
2 eggs, lightly beaten
1/8 tsp. Freshly grated nutmeg
3 Tbsp. butter
2 Tbsp. confectioners' sugar
juice of half a lemon
2) In a mixing bowl combine flour, milk, eggs, and nutmeg. Leave batter a little lumpy
3) Melt the butter in a 12" skillet with a heatproof handle. When the butter is very hot but not brown, pour in the batter. Bake 15-20 minutes or until golden brown.
4) sprinkle the pancake with confectioners' sugar and return briefly to the oven. Sprinkle with lemon juice and serve with favorite topping.
5) If you are using an 11"-12" skillet you might want to double this recipe. Also, when doubling, you do not need to double the butter. (4 to 6 servings)
6) Serve to greedy children.
