Oven Roasted Chicken with Goat Cheese


Ingredients

4 Boneless, Skinless Chicken Breasts, trimmed
3 Tbsp. Butter
Diced Spices (Sage, Thyme, Rosemary, etc.) to taste.
8 oz. Goat Cheese
1 Tbsp. Lemon Juice
2 Tbsp. Parsley, chopped
20 Ritz Crackers, crushed
Toothpicks
Salt & Pepper to taste

Method

1) Preheat oven to 400 degrees.
2) Combine goat cheese, spices & lemon juice.
3) Form into 2x4 inch rectangular shaped blocks (1/2 thick).
4) Cover in plastic wrap and freeze goat cheese for at least 30 minutes.
5) Pound chicken breast with meat tenderizer until about 1/4 - 1/2 inch thickness.
6) Salt & pepper the chicken breasts.
7) Remove frozen cheese and cut into four strips.
8) Wrap cheese with chicken breasts, using toothpicks to secure chicken.
9) Combine crackers & parsley on plate. Melt butter in a saucepan.
10) Roll chicken breasts in melted butter and then in cracker/parsley mixture.
11) Place on baking pan and bake for 60 minutes or until cooked through. (Serves 4)
12) Serve to greedy children.
