Jed's Recipe Book - Miso Soup

Miso Soup - This is worth the time shopping!!!


Ingredients

1/2 Cup Dried Wakame (a type of seaweed found at asian supermarkets)
1/4 Cup Shiro Miso (white fermented-soybean paste, found in the refrigerated section of an asian supermarket)
6 Cups Dashi (type of japanese soup stock - found at asian supermarkets, often in poweder/pellet form where you add water later)
1/2 lbs. soft tofu, drained an cut into 1/2 inch cubes
1/4 Cup thinly sliced scallion greens

Method

Prepare Wakame
1) Combine wakame with warm water, cover by 1 inch and let stand for 15 minutes or until reconstituted. Drain.
Make Soup
1) Make Dashi if necessary. Stir together miso and 1/2 cup dashi in a bowl until smooth
2) Heat Remaining dashi in a saucepan over medium-high heat unti hot - then gently stir in tofu and wakame reconstitute (sometimes there is more wakame after it soaks than you thought, so use as much as you like).
3) Simmer 1 minute and remove from heat. Immediately stir in miso mixture and scallion greens and serve.
4) Serves 6.
