Marinated Pork Tenderloin

Ingredients
1/4 Cup Soy Sauce
Method
TO MAKE MARINATE/PORK:
1/4 Cup Bourbon
1 Tbsp. Brown Sugar
1 2-3 lbs. Pork tenderloin
1/3 Cup Sour Cream (fat-free or light works fine)
1/3 Cup Mayonnaise (light works fine)
3 Scallions, chopped
1 Tbsp. Dry Mustard
1) In a bowl combine soy sauce, bourbon and brown sugar. Mix well.
2) In a large Ziplock bag, add marinate and pork. Marinate the refrigerator for 6-12 hours...turning a couple of times.
3) Drain the pork, reserving the marinate to baste later.
4) Bake the tenderloin at 350 degrees for 45 minutes or until done. Basting with the reserve marinate. Cut into 3/4" slices when serving.
TO MAKE SAUCE:
1) Combine sour cream, mayonnaise, green onions and dry mustard in a bowl. Mix well.
2) Serves 5.
