Hummus


Ingredients

1 19-ounce Can chickpeas, drained and rinsed (a scant 3 1/3 cups)
1/3 Cup toasted sesame oil
1/4 Cup sesame tahini (optional)
1/4 Cup fresh lemon juice
4 cloves garlic, smashed and peeled
1 Tsp. kosher salt
3-4 Dashes hot red pepper sauce
1/4 Cup water
4 Tsp. chopped fresh mint leaves (optional)
4 Tsp. sesame seeds (use only one if also using mint) {optional}

Method

1) Place chickpeas in a food processor or blender and process until smooth, stopping two or three times to scrape down sides of bowl
2) Add all remaining ingredients except water and optional ingredients and process until smooth
3) With motor running - pour water through feed tube in a steady stream
4) Scrape mixture into a bowl and stir in optional ingredients
5) Makes 2 cups. Can last up to 5 days in the refrigerator
6) Serve to greedy children.
