Black Pepper & Herb Crusted Rack of Lamb


Ingredients

2 Frenched Lamb Racks
1 Tbsp. Olive Oil
1 Garlic Clove, Minced
1/2 Tbsp. coarsely crushed black pepper
1/4 tsp. salt
1/2 Tbsp. Flat Leaf Parsley, minced
1/2 tsp. fresh rosemary, or 1/4 tsp. dried rosemary
1/4 tsp. fresh thyme, or 1/8 tsp. dried thyme

Method

1) Brush lamb with oil
2) Combine remaining ingredients into small bowl
3) Rub mixture onto lamb racks
4) Cover and refrigerate for 2 hours.
5) Place Lamb racks in pan, meat side down
6) Preheat oven to 475 degrees
7) Roast for 10 minutes
8) Reduce heat to 375 degrees and roast for another 10 minutes.
9) Let meat stand fro 10 minutes before carving
10) Serves 2-4
11) Serve to greedy children.
