Cheese Bread


Ingredients

1.5 Cups Lukewarm water
2 Packages yeast
7.5 Cups All-purpose flour
3 Tbsp. Sugar
1 Cup Milk
1 Tbsp. Salt
1/4 Cup Butter
1.75 Cups Grated Parmesian Cheese
2 Tbsp. grated Swiss Cheese

ANGLAIS GLAZE
1 egg
1 Tsp. Vegetable Oil
1/2 Tsp. Salt
1/4 Tsp. White pepper
To Make: Combine all ingredients and then strain

Method

1) Place water in large warm bowl or crock
2) Sprinkle yeast over water; stir until disolved. Cover, let stand 15 minutes
3) Combine 1.5 Cups flour and 2 Tbsp sugar. Beat mixture carefully into yeast mixture with wooden spoon until free from lumps
4) Cover with towl; let rise in warm place for 30 minutes
5) Scald milk; stir in salt and remaining sugar. Add butter; stir until disolved. Cool to lukewarm
6) Add to yeast mixture. Add enough remaining flour and to make dough soft - then add 1.5 Cups Parmesan cheese
7) Turn onto lightly floured board. Knead 10 minutes or until smooth and elastic. Add flour if needed
8) Turn dough onto lightly floured board; divide in half. Shape into loaves. Place in 2 well-greased 9x5 inch loaf pans.
9) Cover; let rise 1 hour until double in bulk.
10) Bake at 400 degrees for 10 minutes. Brush tops with Anglais glaze, using pastry brush.
11) Bake 10 minutes. Brush with Anglais glaze, sprinkle with remaining Parmesan and the Swiss Cheese. Bake 5 minutes. Turn loaves onto wire racks to cool.
11) Serve to greedy children.
